Last year I tried to re-create this balsamic melted brie and peppers for New Year's Eve dinner. Over Christmas break we went to Robert Burns Hotel in Collingwood, Melbourne and ordered this. I can't remember what it's called or whether or not it is even Spanish but I remember everyone loving it! So I decided to try to recreate the same dish for New Year's Eve at home!
Ingredients used:
- 2x Brie or Camembert
- 1/2 Red Capsicum
- 1/2 Eggplant
- 3/4 cup Green Olives
- 1/3 cup Balsamic Vinegar
- 2 tbsp extra virgin olive oil
- Dash of pepper and mixed spice
It is really simple and easy to make. Just fry all of the ingredients together making sure the sweet and sourness from the balsamic vinegar is absorbed into the peppers, eggplant and olives. Add spices and serve on top of your Brie! Best served on a hot plate over tea lights to keep the brie warm. Once you cut into the brie, it will ooze out into melted deliciousness.
