Last year I tried to re-create this balsamic melted brie and peppers for New Year's Eve dinner. Over Christmas break we went to Robert Burns Hotel in Collingwood, Melbourne and ordered this. I can't remember what it's called or whether or not it is even Spanish but I remember everyone loving it! So I decided to try to recreate the same dish for New Year's Eve at home!
Ingredients used:
- 2x Brie or Camembert
- 1/2 Red Capsicum
- 1/2 Eggplant
- 3/4 cup Green Olives
- 1/3 cup Balsamic Vinegar
- 2 tbsp extra virgin olive oil
- Dash of pepper and mixed spice
It is really simple and easy to make. Just fry all of the ingredients together making sure the sweet and sourness from the balsamic vinegar is absorbed into the peppers, eggplant and olives. Add spices and serve on top of your Brie! Best served on a hot plate over tea lights to keep the brie warm. Once you cut into the brie, it will ooze out into melted deliciousness.

Its time satisfy your sweet tooth with these easy, fun and PINK cupcakes!
You will need:
Cupcake:
- 1 box of Vanilla Cake Mix
- 2 Eggs
- 3/4 Cup of Full Cream Milk
- 1 Tsp Vanilla Extract
- 60g Butter
- Cupcake paper cups
Icing:
- 150g Butter
- 1 1/3 cup Icing Sugar
- Pink food dye
Chocolate spikes:
- 1 block of White Chocolate
- 1/3 block of Milk or Dark Chocolate
- Your favourite sprinkles or chocolate bits
- Baking tray
- Greaseproof paper
Step One
Preheat the oven to 160C fan-forced and place cupcake paper cups into cupcake tray
Step Two
Using an electric beater, combine all ingredients for the cupcake into a large mixing bowl and mix for 3 minutes on low until completely smooth
Step Three
Evenly spoon in the batter into the cupcake cups and bake for 20minutes
Step Four
In a new bowl, combine butter, icing sugar and pink food dye for icing and mix until light and fluffy
Step Five
Melt the white chocolate in a bowl for 1 minute & 15 seconds in the microwave and stir continuously until chocolate is completely melted into a liquid
Step Six
Do the same for the dark or milk chocolate in a separate bowl
Step Seven
Lay a sheet of greaseproof paper onto a baking tray and smoothen it out with a spatula
Step Eight
Decorate the white chocolate with the dark chocolate making swirls and adding some sprinkles or chocolate flakes while the white chocolate is still warm
Step Nine
Cool the slab of chocolate in the fridge for 1 hour and cut it into alternating spikes
Step Ten
Once cupcakes have cooled, top them with your pink icing, decoration and choc spikes
